Organic Apple Cider Vinegar

EDEN Organic Apple Cider Vinegar starts with EDEN Organic Apple Juice, made from a blend of apple varieties, organically grown on family owned orchards on the shores of the Great Lakes, an ideal fruit producing area because of the seasonal lake effects. Eden juice apples are slowly pressed and lightly filtered, using no 'press aids' or enzymes, then slowly transformed into the finest Apple Cider Vinegar.

EDEN Organic Apple Cider Vinegar is naturally fermented with 'mother' of vinegar, a friendly natural bacteria culture similar to 'starter' used to make country bread. Appearing as cloudiness in the final product, the presence of mother indicates the best quality raw vinegar. The apple juice goes through a primary fermentation to reach the desired alcohol content, and a secondary fermentation to change the alcohol into acetic acid. Then it is patiently aged in cedar wood casks. EDEN Vinegar is bottled in amber glass to protect its flavor, bouquet and nutritional integrity.

Apple Cider Vinegar is traditionally the most widely relied upon vinegar in North America. Its soothing, healthy, and rejuvenating effects are very well documented from diaries of the early pioneers to the Internet. Applied externally cider vinegar was used to soothe sunburns, bee stings, insect bites, athlete's foot, dandruff and acne; to soften dry skin, strengthen nails and restore luster and shine to dull hair. It is also used liberally to massage sore muscles. Vinegar has provided good health and zest to people for over 7,000 years.

Most commercial vinegars are highly denatured through the use of extreme heat and chemical solvents. They are formulated rather than fermented. Please avoid any vinegar labeled 'distilled', as it is the most highly refined and least healthful. For the flavor and benefit of true raw vinegar choose EDEN.

EDEN Organic Apple Cider Vinegar is an excellent ingredient for dressings and sauces. To make an old time Yankee tonic combine two teaspoons EDEN Organic Apple Cider Vinegar and one teaspoon of good honey in a cup of water. A safe effective way to clean fruits and vegetables: soak them in water with a splash of EDEN Organic Apple Cider Vinegar. Wheat Free / Non Gluten

Gluten is an insoluble protein found in wheat (including different varieties such as spelt and kamut), rye, barley, and cross-bred hybrids, such as triticale, which is a cross between wheat and rye. It is estimated that more than 2 million people in the U.S. have Celiac disease, a disorder in which the lining of the small intestine is damaged in response to ingestion of gluten. Millions more have varying levels of gluten sensitivity or wheat intolerances, also known as wheat allergies, etc.

As of this date there is no specific U.S. food regulation for labeling of gluten free foods. Current industry standards are below 20 parts per million equals gluten free. Those who require a wheat free or gluten free diet face challenges because wheat and wheat derivatives are so prevalent.

What Eden Foods means by 'Wheat Free' is that there are no wheat or wheat derivatives in the ingredients, though these foods may contain gluten.

What Eden Foods means by 'Non Gluten' is:

  1. Eden's full ingredient disclosure, and requirement of such from all secondary suppliers assures that there are no ingredients that contain, nor are derived from wheat or any other gluten-containing grain.
  2. Eden Foods is highly proactive toward food safety, sanitation, and the prevention of allergen cross contamination as exemplified by our ongoing participation with food safety programs such as HACCP (Hazard Analysis at Critical Control Point) and AIB International audits.
  3. Eden routinely tests for gluten in foods that are listed as 'non gluten'. Our non gluten confidence is not solely based on testing, but also on good manufacturing practices and meticulous handling.
  4. Occasionally Eden Foods changes ingredients or suppliers and this may affect the 'Wheat Free' or 'Non Gluten' status of our products. If this should occur we immediately update our "Wheat Free and Non Gluten List" to reflect any change.
  5. While extremely unlikely, it is conceivable that EDEN products listed as 'non gluten' could become affected with miniscule amounts of gluten. Please use common sense depending upon your level of sensitivity and feel free to contact us about specific Eden foods.

    Antioxidants

    Vitamin C, vitamin E, and beta-carotene are well known antioxidants with recommended daily values. However, there are many compounds found in food known as phytochemicals that have no set recommendation, yet they produce antioxidant activity. Foods contain different phytochemicals collectively referred to as flavonoids. These include isoflavones, carotenoids, and many more. They are too numerous to attempt to list.

    While no clear, widely accepted and well-established definition for antioxidants has been developed within the scientific community, the FDA states "the term antioxidant may be used for a substance for which there is scientific evidence that, following absorption from the gastrointestinal tract, the substance participates in physiological, biochemical, or cellular processes that inactivate free radicals or that prevent free radical-initiated chemical reactions." Furthermore, the "FDA recognizes that foods may contain a mixture of substances, both nutrients and non-nutrients, that participate in antioxidant processes. However, there are no reliable methods available that measure the antioxidant activity of all substances that participate in antioxidant reactions when an entire food is consumed."

Why Kosher?
Eden appreciates the value of kosher and pursued the highest quality certification after realizing that in providing our customers with what they wanted, almost all of our food was already strictly kosher. We chose the Organized Kashrus Laboratories and their 'circle K', mark because of their reputation for meticulous attention to detail dating back to 1935. The , when it appears alone as on Eden packages, means that the food is pareve as well as kosher. Pareve means that food and food contact surfaces are free of both dairy and meat. It means that none of the equipment used in processing or storing the food has ever come into contact with any animal product.

In 1988, after twenty years of organic certification, Eden began working with third party organic certifiers. In fact, our in-house systems and manuals that we shared became the first legitimate, functional, third party organic certification for growers and processors in North America. Although we work with a select group of certification agencies, we still, and will always maintain the primary responsibility and due diligence in insuring Organic Authenticity to our customers. Family farms supply 100% of Eden's organically grown food. Eden does not consider food 'certified organic' unless we have verified that there is a meticulous 'audit trail'.
